Freya Birch Spirit

And now for something completely different…

Earlier this month, Dapper Chapper were invited to the launch of a brand new spirit called Freya. Freya is the first spirit of its kind to be created from foraged birch sap, found in the forests of Northern Europe and for those of you Chapper’s that are familiar with your Norse mythology, you will know that ‘Freya’ is the goddess of love, beauty, fertility and sensuality.

& we can confirm that we do indeed love this new addition to the DC Bar.

We found Freya to be a real sensation on the pallet. It gives a smooth, aromatic yet florally taste with a hint of peaches and when even drunk neat does not leave a burning after taste that some white spirits, such as gin or vodka, can. We would highly recommend for Freya to be the newest addition to any alcohol collection due to the fact that there is nothing else out there on the market at the moment and due to its unique taste and versatility, Freya, would be the perfect beverage for the upcoming party season and would most definitely be a talking point.

During the launch of Freya, which was held in the perfect surrounds of the Cuckoo Club, DC were able to check out first hand  just how adaptable this new spirit is by sampling it in the guise of a few different cocktails. To inspire you once you pick up your own bottle, here are our favourites:

Freya & Tonic

  • 50ml Freya
  • 100ml Fever Tree Elder Flower Tonic
  • Liberal  amount of mint garnish
  • Crushed ice
  • Best served in: a highball glass

Birch & Moss

  • 45ml Freya
  • 20ml forest floor cordial (contains: moss, nettle, pine)
  • 10ml La Gitana Manzanilla sherry
  • Dash of lemon bitters
  • Best served in: a martini / coupe glass

Hallow Fair

  • 50ml Freya
  • 25ml gingerbread syrup
  • 25ml black tea cold brew
  • 20ml lemon juice
  • 3 dash of cardamom bitters
  • Garnish with a scorched pine cone
  • Served over ice
  • Best served in: coupe glass
