Well Dapper Chappers, we think we might well have found one of the most exclusive, most appealing and most dapper pop-up events yet….so don’t say we’re not good to you.

Regular readers of The Dapper Chapper will attest to the fact that we are particularly partial to a good dram of whisky. You will also know that we are very fond of fine cuisine. So imagine our excitement when we found out that The Scotch Malt Whisky Society has teamed up with The Wild Game Co. to pair seasonal wild game with its rare single cask whiskies at the Glorious 12 pop-up at Studio 2, New Inn Yard in Shoreditch, London in from 11-13 September.

Yes you read that right – a variety of top quality wild game dishes paired with some of the Scotch Malt Whisky Society’s finest tipples. And yes, you also read that correctly, it truly is a “pop-up”, only being in London for three days. But what can you expect from the Glorious 12 Whisky & Game Bar?

Well, to be precise, you can expect 12 single cask whiskies matched with 12 dishes of Scottish game tapas, devised by founder of The Wild Game Co. Andy Waugh (pictured).

Expect dishes like:

  • Grouse, toasted brioche, roasted and pureed fig paired with a 34 year old juicy oak and vanilla single grain dram (pictured below)
  • Roe deer striploin with frites, béarnaise and rowan jelly paired with a 22 year old peated dram
  • Partridge, butterbean and chorizo matched with a 20 year old spicy and sweet dram

Glorious 12 will offer a ticketed hosting dining experience with two sittings each night at 6.45pm and 8.45pm. But don’t expect to just eat game and drink whisky.

No no no….here at Dapper Chapper we like to send you to things that make you leave a little more Dapper than when you entered. Each night there will be an expert speaker educating you on Game, Whisky and how to pair the two successfully. The speakers each night are as follows:

Thursday 11th September – Foraging flavours with Thom Hunt

The founder of wild adventure company, 7th Rise, Thom Hunt, will guide guests through foraging in the wild, showing how to find the best of the countryside’s hidden treasures

Friday 12th September – Game butchery with Thom Hunt

Learn the basics of butchering game, including small birds and rabbits. Thom Hunt will detail the basics of skinning and butchering small game with a live demonstration, highlighting the best cuts and describing some of his favourite recipes

Saturday 13th September – DIY meat smoking with Ru Emslie

Game specialist Ru Emslie talks guests through how to smoke meat and fish at home. The talk includes how to make your own meat smoker as well as the best ways to create delicious wood-smoked game at home

Tickets are £29 – This includes a hosted dining experience, incorporating your choice of 4 pairings of game and whisky and the guest talk. Only ticket buyers have access to the full menu of 12 whisky and game pairings.

And if you can’t make it to London for this incredible event, then why not try one of Andy Waugh’s dishes for yourself, with this recipe for wild boar ribs with radish salad – one of the dishes that will be served on the night:

Wild boar ribs -(beef and pork also works with recipe)

Ribs – Jacobs Ladder style – ask your butcher to cut them down

For the dry rub:

1tbs Szechuan pepper

2tsp Smoked paprika

1tsp Cayenne pepper

1tsp Salt

1tbs Brown sugar



Blend the dry rub ingredients into a fine powder.

Cover the ribs in the dry rub and leave in the fridge for 12-24hrs

Cooked at 90C for 12hrs, turn up the temp. to 180C for the final 20mins until golden and crisp

Serve with a crisp radish salad.

Pair with a lightly peated whisky which can stand up to the strong flavours of the meat but also not overwhelm the meat.
