Something was brewing down at Mark’s bar in Soho definitely worth investigating, so one summer’s evening we went to see what all the fuss was about. Yes, excuse the pun but HIX’s signature joint has a brand new cocktail on the menu and it’s a delicious twist on an iced tea. Usually more of an American indulgence, the cross-pond summer staple has made it’s way over accompanied by the ever-impressive Woodford Reserve.

Wickedly delicious and just the right side of sweet, ‘You’re Not My Sun, But It’s Fire’ strikes the perfect balance. After being introduced to the creator himself, we got down to tasting ‘You’re Not My Sun, But It’s Fire’ – and it was a hit.

Sweet but not too sweet, with tartness accented by the dehydrated peach garnish this was perfect for the sticky summer evening. Strong brewed English Breakfast Tea blended with Woodford Reserve and peachy goodness, this was a moreish cocktail that took the essence of the traditional American iced tea and gave it a modern, sophisticated makeover.


One of the newest additions to Mark’s Bar, this is sure to be a hit not just over summer but following through the rest of the year – it’s certainly not to be consigned to one season. Next time you’re in Mark’s, be sure to make yours a tea.

Ingredients:

10ml Sugar Syrup

15ml Lemon Juice

50ml Woodford Reserve

5ml Crème De Peche

35ml English Breakfast Tee

Garnished with Dehydrated Peach
